Cool popsicle recipes

Use a popsicle mould to make these recipes, with food grade wooden sticks. Homemade popsicles are so easy to make and are more nutritious than most shop-bought versions.

1. Crunchy and colorful.

The iconic popsicle is one with lots of sugary sprinkles. To make a healthier version coat frozen homemade fruit popsicles in a mixture of crumbed biscuits, like Graham crackers, and mashed freeze dried strawberries – yum! A fruity popsicle blend we like is the zingy taste combo of pineapple, banana and orange. Blend 2 cups fresh chopped pineapple, 3 bananas, peeled and 2 oranges, peeled. Makes 10 popsicles.

2. Strawberry delight.

Blend together 2 cups mashed strawberries, 2-3 tablespoons honey and the juice of a lemon or a lime. Makes 8 popsicles.

Fancy fruit and yogurt popsicles

Here’s two tasty recipes to make perfect for any party (you might want to make them for the 4th July celebrations too!).

1. Strawberry and vanilla sensation.

Puree 1 cup of strawberries, hulled and cleaned (if you like you can keep a few in chunkier pieces to give extra texture). Get a cup of vanilla Greek yogurt and alternate adding the strawberry puree/chunks and yogurt into the popsicle moulds, or mix together to make swirls of flavor. Makes 6-8 popsicles.

2. Blueberry bonanza.

Mix together 2/3 cup lemon juice, plus zest from lemons; 2 1/2 cups vanilla greek yogurt; 2 1/2 cups blueberries; 2 1/2 cups mixed berry Greek yogurt. Add a drizzle of honey if needed. Makes 10 popsicles.

Fun serving suggestions

A good way to serve popsicles, to stop little people getting covered in splashes of juice (mums will thank you for not sending their children home covered head to toe in stains!), is to pop each one into a colorful container. Children will also love it if you write their names on their popsicle stick, so they get a little personalised treat especially for them!
